- Here's a recipe that my mom's been making for as long as I can remember.
- Unfortunately, that means I don't have exact measurements - adjust these
- suggested ones to taste.
-
- Oriental-style cold green beans (works well with asparagus, too)
-
- 1/2 to 1 pound green beans (or asparagus)
- 1/4 cup diced pimientos or roasted red bell pepper
- 1/4 cup soy sauce
- 1 t to 1 T toasted sesame oil (depending on your preferences)
-
- String the beans and cut into 2"-3" lengths. Blanch until barely tender
- and bright green. (The way we do it is to place them in a frying pan with
- enough cold water to cover/float. Place over high heat, and bring to
- boiling point. Remove from the heat and let sit until the water has
- cooled.) If you're blanching using the traditional dunk-into-boiling-water
- method, plunge into cold water to stop the cooking. Combine with the
- pimientos. Combine soy sauce and sesame oil and drizzle over vegetables.
- Serve chilled.
